Senior Sous Chef Daniel Anselmus from Le Méridien Kota Kinabalu leads this special culinary collaboration, bringing authentic Sabah flavours to the heart of the city for a limited time.
Chef Daniel’s menu brings the flavours of his homeland to life, a reflection of Sabah’s nature, heritage, and traditions. Drawing on time-honoured methods such as fermentation, pickling, and slow cooking, each dish captures a true sense of place. Expect river fish, forest vegetables, wild herbs, and native fruits, all thoughtfully combined to honour the essence of Sabah’s culinary heritage.

Ayam Kodop Bambangan
Tender chicken served with Kodop (wild forest mushrooms) and Bambangan (fermented wild mango). The dish is boldly pungent, tangy, and unmistakably local.
Pinasakan Ambuyat
A classic of Kadazan-Dusun homes — fish stewed with Takob-akob (wild fruit) until meltingly soft and savoury. Best paired with Ambuyat, a thick, starchy sago dish ideal for dipping and twirling.
Daging Masak Lengkuas Tuhau
Slow-cooked beef with Lengkuas (galangal) and Tuhau, a native wild ginger prized for its sharp, citrusy bite. A dish full of Sabah’s character.
Ayam Bakar Madu Penampang
Chicken marinated in native aromatics, baked until golden, and served with a soy-chilli dipping sauce for a sweet and smoky finish.
Linopot
A heritage rice dish of wild steamed rice (Naig Tidong), wrapped in leaves and served with traditional sides such as Tuhau, Lousun (wild shallots), Bambangan, and Ayam Kodop Bambangan. Rustic and deeply flavourful.
